These are the perfect sweet treat to keep in your freezer for those munchie moments, you can indulge without the guilt.
It’s no secret that cannabis can heighten cravings. But I never identified with the stereotype of a stoner sitting on the couch arm deep in a bag of Doritos. Instead, I love to use munchies to indulge in a mindful way that satisfies cravings and nourishes the body. I like to keep healthy munchies in the house, like these peanut butter cup oat bars, to avoid over-processed foods when the munchies kick in.
If I’m stoned in a grocery store there is a 100% chance I am buying Justin’s Peanut Butter Cups. This recipe is my attempt at managing this addiction in a slightly more mindful way. These Peanut Butter Cup Oat Bars are so easy to make and taste just like peanut butter cups. The best part? They are much healthier than processed store-bought treats – they have zero refined sugar, are gluten-free, dairy-free, vegan, and are protein-packed. Not to forget, this recipe includes a healthy dose of dark chocolate (70%+) which supports overall endocannabinoid system function.
My suggestion? Carve out 30 min of your Sunday to smoke a j and make these for healthy munchies all week long.
what we need
8×8 baking pan (other similar sizes will work)
Peanut butter oats:1 cup unsalted, natural peanut butter (no sugar added)¼ cup + 2 tbsp natural maple syrup1¼ cups gluten-free organic rolled oats¼ cup chia seeds or flax seeds
Chocolate topping:½ cup vegan dark chocolate chips (70%+)¼ cup + 1 tbsp unsalted, natural peanut butter
PREP THE PAN: Line an 8-inch square baking pan with parchment paper or wax paper. Set aside.
MIX THE OATS LAYER: In a medium, microwave-safe bowl (large enough to add oats later), add peanut butter and maple syrup. Mix together until well-mixed. Heat in 20-second increments in the microwave until warm, fragrant and thickened. Mix in between heating increments.Stir and fold oats and seeds until thoroughly combined. Pour this mixture into the prepared baking pan. Using a rubber spatula, smooth into an even, tightly-packed layer. Set aside.
MIX CHOCOLATE LAYER: For this step you can use the double boiler method or do the following in a microwave. In a medium, microwave-safe bowl, add chocolate topping ingredients. Heat in 20-second increments until softened and melted. Stir until smooth.
COMBINE: Pour the chocolate mixture over the oats. Smooth into an even layer.
FREEZE: Freeze for 30-40 minutes, or until firm. Remove from the freezer and slice into 12-16 bars. Enjoy!
STORE: Store in an airtight container in the freezer. Allow bars to thaw 5-10 minutes before eating.
